Peanut Butter Oatmeal Cookies

Today, I baked my second recipe, peanut butter oatmeal cookies. Oatmeal has become an important part of my breakfast because of my acidic stomach. As of its nutritional and health benefits, oats are rich in fiber, with antioxidants properties, a great source of vitamins and minerals, gluten-free and can make your stomach full longer. Almost every morning I eat whole rolled oats, cooked it with milk and top with fruits. Whole rolled oats have more nutritional value than the instant one.

One of my favorite oats recipe is cookies and I always buy a ready made oatmeal cookies in the supermarket. But now I tried to bake my own version of this recipe. Oatmeal cookies is one of the easiest and simplest recipe. It took me only half an hour preparing and baking it. As for the ingredients, everything is just available in the kitchen.

Here are the ingredients I used for my Peanut butter Oatmeal Cookies:

1 ½ cups whole rolled oats
1 cup all purpose flour (sifted)
¾ cup brown sugar
1 egg
½ cup unsalted butter (slightly melted)
½ teaspoon baking soda
½ teaspoon cinnamon powder
½ teaspoon vanilla extract
¼ cup of fresh milk
¼ cup peanut butter
A pinch of salt


  1. Pre-heat the oven to 350 degrees F (177 degrees C).
  2. In a bowl, cream the butter and brown sugar until light using a hand mixer for about 3-4 minutes.
  3. Then add the egg, milk, peanut butter and vanilla extract. Continue to mix for another 2 minutes or until the ingredients are fully incorporated.
  4. In another bowl, combine together the all purpose flour, whole rolled oats, baking soda, cinnamon and salt using a spatula.
  5. Add the dry ingredients gradually to the wet ingredients and mix it using hand mixer or using a spatula, just enough to combine all the ingredients. Do not overmix.
  6. Scoop the dough and round it like a ball, then put in a tray with parchment paper. Flatten the dough before putting in the oven.
  7. Bake at 350 degrees F (177 degrees C) for about 9-10 minutes or when the edges are lightly browned.
  8. Let them cool and transfer in a tight covered container.

My oatmeal cookies turned to be soft and chewy in the inside. I did not put chocolate chips or raisins because I will try to give my dog a taste of it. One or two pieces can already satisfy my hunger because it’s really filling. Next time I will try to make a healthier version of it.
